Summer has got us craving for freshness, but we all know that only fruits can sometimes get boring. This is when a fruit tart comes in the mix. A quick, delicious dessert, perfect for a brunch or just an afternoon with your friends.

Smells Like Summer and….Fruit Tart!

Ingredients
Tart:
2 eggs
3 tbsp sugar
3 tbsp vegetable oil
2 tbsp all-purpose flour
1 tsp vanilla extract
1 pinch of salt
Vanilla cream:
You can either make your own custard or use vanilla pudding. We got a packet of dr. Oetker pudding and prepared it accordingly.
Topping:
Any kind of fruit (we used raspberries, kiwi, peaches, bananas and mandarin oranges in light syrup)
Glaze:
10g clear powdered gelatin (or 6 gelatin sheets)
Instructions
Directions: Mix all the ingredients for the tart together. Before pouring the batter into a flan tart pan (shown below), grease the pan with butter and sprinkle some flour on top. Now you’re ready for baking. Bake the tart at 170C or 338F for approximately 10 minutes.
After preparing your custard or pudding, pour it onto the tart immediately, when it’s still hot.
Slice your fruits in any way you want. Get creative and spread them all over the tart.
Use the directions on the package of the gelatin to prepare it. When it’s done, pour it on top of the fruit and make sure it’s spread evenly.
Leave the tart in the fridge to cool and serve plain or with whipped cream.
