Shamrocks, carnivals and golden pots. These are three things that come to mind whenever St. Patrick’s Day is around. But we can’t forget about the importance of snacks at any party of this kind.
After so much dancing, it’s guaranteed that someone will be in need of some sugary treats that could fill their stomach and boost their energy for another round.
If you’re a host or just want to feel festive, try this quick recipe which will give you the adorable cake pops you desire:
Lucky Cake Pops

Ingredients
A pack of Golden Oreos (36 oreos in total)
6.5 oz cream cheese
1 ½ tsp mint extract (you can start out with only one tsp or even half and add based on your taste)
1-2 tsp vanilla extract
Green/white chocolate to melt (meltables would work the best, but regular chocolate is fine as well)
Lucky Charms for topping
*You will need cake pop/lollipop sticks. We used 6 inch ones, but it really depends on how you want to dispose them.
Instructions
Take the oreos and split them, putting the biscuits in one bowl and the filling in another.
After separating them, put the cookies in a Ziplock bag and gently crush them with a rolling pin or even a hammer, it doesn’t matter (You can also use a food processor if you have one).
Add the cream cheese to the oreo filling and mix. Add the mint and vanilla extracts and keep mixing until they are fully incorporated. Gradually add the crushed oreos.
When everything is evenly spread, put the mixture in the fridge to cool for about 10-15 minutes. After that, you can start making balls, small to medium sized (if they’re too big, they will fall off the stick).
Melt some chocolate and dip the sticks in it before sticking them onto the cake pops. When you’re done, put them back in the fridge for 10 minutes.
Melt some more chocolate and cover the cake pops in it. You can make any patterns and designs. We used Lucky Charms and green chocolate to make them look festive.
