Ingredients
Cake sheets:
2 large eggs
9 tbsp sugar
9 tbsp vegetable oil
9 tbsp milk
700 gr (6 ½ cups) all-purpose flour
1 tsp baking powder
A pinch of salt
Filling:
5 tbsp all-purpose flour
10 tbsp sugar
300 ml (10.5 oz) milk
400 gr (3 ½ sticks) butter
2 tsp vanilla extract
200-250g ground walnuts
1-2 tsp rum extract
Chocolate glaze:
100 ml (4 oz) heavy cream
8 tbsp sugar
4 tbsp cacao
*ground walnuts for topping
Instructions
For the cake: Mix the eggs and sugar until the sugar dissolves. Slowly add the oil mixing continuously and then add the milk until all liquids are evenly spread. Stirring with a wooden spoon (or any other kind of spoon, just don’t use a mixer), add in the dry ingredients (flour, baking powder and salt). The batter should turn out more liquidy and not too thick. Turn a rectangular cooking pan over and sprinkle some flour on it. Split the batter in four and pour one of the quarters on top of the pan (basically its butt). Bake for about 5-7 minutes. When you take it out of the oven you have to be very careful and quick when taking the cake sheet off. Use a knife and again, you have to be fast, if not you will never be able to take it off since it will stick to the pan.
For the filling: In a saucepan put the flour, sugar and milk, stirring, at medium heat until it thickens.Remove from heat and let it cool. After it cools completely add the butter, vanilla and the orange zest and juice.Put the cream in between the cake sheets.
For the glaze: Put the chocolate, heavy cream, sugar and cocoa powder. Whisk constantly and let it boil until it becomes dense. Pour the glaze on the cake. Sprinkle some walnuts on top. Leave the cake in the fridge for the glaze to harden and then cut it in small squares/rectangles. Ta daa, magic was created and now you get to savor it!
