Thanksgiving is over and with it, the autumn season is officially done. After a nice dinner, no matter how many people you invite to your house, there are always going to be some kind of leftovers, which usually end up being thrown away after awhile.
But hey, we found a perfect and easy solution for the cold mashed potatoes crying in your fridge. If you want to recreate your mashed potatoes and have a tasty lunch, you should try this recipe.
Don’t worry if they aren’t perfect looking, the first time we did it, they looked pretty bad too.
P.S. This recipe can be done in half, and you can still use one egg for the composition.

Mashed Potatoes Bites

Ingredients
4 cups (960g) mashed potatoes
1 ½ (150) cups mozzarella
6 tbsp parmesan
½ tbsp garlic powder
1 tsp black pepper
3 eggs
2 cups Italian Style bread crumbs (it can be any kind, but we like Italian because it has different spices and herbs in it) *the measurement for bread crumbs might differ, so as long as you cover the balls in it, you should be good.
2 cups oil (or however much oil you need to deep-fry in your saucepan)
*salt is optional, since the potatoes are already salted and there is salt in the garlic powder.
Cranberry sauce and sour cream optional (for topping)
Instructions
First of all, put the mashed potatoes, mozzarella, parmesan cheese, garlic powder, 1 egg and black pepper in a large bowl. You can use anything to mix them together, but the most efficient way would be your hand. After the mixture is evenly spread and it doesn’t crumble in your hand, you can start making small to medium sized balls out of it.
When they’re all ready, put them in the fridge for at least 30 minutes.
While they’re cooling, you can beat the two remaining eggs and put the breadcrumbs on another plate. In a saucepan pour the oil and heat it up. Meanwhile, you can start putting the balls in the egg and then roll them in bread crumbs. When the oil is hot, start deep-frying the balls, until they get a golden color.
Serve them warm with cranberry sauce, sour cream or maybe, next to a sandwich.
