Sweets, TREATS
Ingredients
6 large eggs
6 tbs sugar
500g (2 ½ cups) mascarpone
Around 20 lady fingers
300ml (10 oz) strong coffee
50ml (¼ cup) amaretto
340g (12 oz) raspberry
5 tsp good quality cocoa powder
Instructions
Separate the eggs and beat the egg whites until they form soft peaks. Set aside.
In a large bowl mix the egg yolks with the sugar until the sugar dissolves and the mixture becomes white. Using a spatula, slowly fold in the mascarpone. Add the egg whites and whisk until everything is evenly spread.
Mix together the coffee and amaretto. Take the lady fingers and break them in half. Dip them in the liquid mixture just enough for them to get wet.
In your glasses, they can be any kind you want, layer the lady fingers, cream and raspberries in any form you want to make them look pretty. Top it with some cocoa powder and you’re done.
