The freshness of summer inspired us to make an equally fresh dessert. Colorful, yet classy, this white chocolate mousse with a hint of raspberries will lighten the mood and impress anyone on your guest list. Without further ado, scroll down to find the recipe for this airily delicious dessert.
Ingredients: Yield: 6
For the raspberry jelly:
300 g frozen/fresh raspberries
100 g granulated sugar
50 ml water
5 g gelatin
20 ml cold water
Leave the gelatin in the cold water so it can moisten.
In a medium-sized saucepan, put the rest of the ingredients (raspberries, sugar, water). Boil them until they liquefy and become a syrup.
Add the syrup to a blender/food processor and blend until the raspberries are mashed and the texture of your mixture becomes more stiff.
Your raspberry mixture should still be hot by now to add the gelatin and stir until fully combined.
Cover with plastic wrap and leave it in the fridge to cool completely (2-3 hours should do it).
For the white chocolate mousse:
2 egg yolks
2 tbsp granulated sugar
150 ml milk
4 g gelatin
20 ml cold water
200 g white chocolate
Put the gelatin in water to hydrate.
In a medium or large sized saucepan add the milk and let it warm.
In a medium-sized bowl, mix the egg yolks and sugar until the sugar dissolves. Pour the warm milk in the bowl and gently mix.
Move the milk mixture back to the saucepan and stir continuously at a low temperature until the mixture thickens a little. Add the gelatin and continue stirring.
Before adding the white chocolate, you should put it in the microwave for a couple of seconds until it starts melting. This way it will take less time to melt in the saucepan, but still keep it creamy.
Putting it together:
You can decorate and combine the white mousse with the jelly in any way you want. We decided to give it a more geometric look, putting the white mousse at the bottom and some of the jelly on top of it. For more decorations, we used white chocolate shavings and some raspberries.
