Admit it, during this time of the year, we all go on Pinterest and search things like “healthy snacks for summer” or “summer quick recipes”. However, we always end up just aspiring to taste that delicious looking food, but never actually make anything because of the lazy summer mood. Been there, done that. But this is soon going to change.
We prepared some yogurt barks that are guaranteed to give you enough motivation to get up and use your kitchen for more than preparing cereal in the mornings. These treats are not only tasty but also last longer than imagined, so gather your ingredients right now!
CocoNUTS for Yogurt Barks

Ingredients
Coconut yogurt:
1 cup yogurt
*1 tbsp agave syrup (or any type of sweetener you like ex: honey, maple syrup etc.)
½ cup coconut shavings
Chocolate yogurt:
1 cup yogurt
*1 tbsp agave syrup (or any type of sweetener you like ex: honey, maple syrup etc.)
2 tbsp cocoa powder
Coconut shavings and strawberries for topping (or any other topping of your choice)
*You can add more than one tablespoon of sweetener, but we like it more fresh and wanted to keep it as healthy as possible.
Instructions
Take to different relatively small bowls. In each one of them put one cup of yogurt and add the agave syrup. Stir until evenly spread.
In the one bowl add the coconut shavings and in the other gradually add the cocoa powder. Whisk in both of them until the ingredients look fully incorporated.
Line a baking pan on parchment paper and pour the two mixtures. You can either choose to have to levels or you can use a stick to give it a marble look like we did.
Add your desired toppings, we chose more coconut shavings and fresh strawberries.
Freeze until the mixture is solid (we recommend leaving it overnight).
