Ingredients
Dough:
(280g) 2 ½ butter sticks
(300g) 2 ½ cups flour
(140g) ¾ cups sugar
(140g) 1 ¼ cup ground walnuts
1 tsp cinnamon
1 tsp vanilla extract
Salt
Filling:
5 egg yolks
(300g) 1 ½ granulated sugar
(50ml) 1.6 oz milk
(100g) ½ cup cocoa powder
(300g) 3 butter sticks
Glaze:
(200g) 1 cup chocolate chips
( 50g) ½ butter stick
Accessories:
Small round cookie cutter
Instructions
Dough: First, you will want to mix all the ingredients together and knead it in order to form the dough. Lay the dough and cut as many circle shaped cookies as you can. Put the cookies in a pan and bake at 200C for 10 minutes.
Filling: In a bain-marie* put the egg yolks, sugar and milk. Boil until the mixture has a thick and creamy texture. Remove from heat and add the cocoa powder. Let it cool and then add the butter. *In case you don’t know what a bain-marie is, it is a method where you put water in a tall pan and let it boil. Over that, you put your smaller saucepan and stabilize it so the bottom doesn’t necessarily touch the water but all the steam comes towards the saucepan which holds your ingredients.
Fill the cookies by taking two of the same size and sticking them together with the cream you just made.
In a small/medium sized bowl, add the chocolate and the butter and then put it in the microwave to melt. Every 20 seconds you can check it and stir so you make sure you don’t let it in for too much time.
For your final step, pour the melted chocolate on the top of the cookies and add any type of ornaments you desire.
