Dobos Torte is a hungarian dessert and a very well-known chocolate filled cake with a twist of caramel topping. Fun historic fact: This torte has been here since 1885 and was invented especially because at the time, refrigerators weren’t really a thing, thus they wanted a dessert that could last for a longer time.

For the cake: First, the egg yolks and the ½ cup of sugar have to be mixed together really well, until they have a creamy texture. In a separate bowl, beat the egg whites until they form soft peaks. Add the flour and egg whites to the sugar and egg yolks mixture. To make really thin sheets of cake, you have to turn the pan over and put parchment paper on it. Pour mixture and spread it out until you almost see through it. After baking for 5-7 minutes at 356°F (180°C), take it out and immediately try to carefully take it off the parchment paper so it doesn’t stick. Use a knife to gently separate the cake sheet from the pan. Repeat for each cake sheet.
For filling: Beat the eggs until they become “fluffy” and then add the icing sugar. Carefully add the butter and cocoa powder to the composition. Fill the thin cake sheets with this mix.
For the glaze: Put the sugar, water and lemon juice on medium heat and let the caramelize. Pour the “caramel” on top of the cake. With a warm knife quickly trace lines to divide the cake before the glaze becomes solid.
